本文考察了温度、光照、微波辐射及金属离子等理化因子对番茄红素油树脂稳定性的影响，结果发现，常温下番茄红索油树脂比较稳定，但较高的温度（〉50℃）对油树脂中番茄红索破坏较强；日光下对油树脂中番茄红索有一定的破坏作用；微波辐射对油：对脂中番茄红素的破坏作用很大；金属离子中Na＋、Ca2＋和Zn2＋对油树脂中番茄红素的影响不大，Fe2＋和Cu2＋对油树脂中番茄红素有很强的破坏作用。
