The objective of this study is to compare bioactive functions of three Triticum aestivum extracts treated at chilling temperature. Water extract showed the highest 1,1-diphenyl-2-picrylhydrazyl (102 μg/mL) and α-glucosidase inhibitory (823 μg/mL) activities. Ultimately, T. aestivum could be useful as a natural agent for bioactive management.
