本文检测了不同分子量范围的WPI（乳清分离蛋白）酶解物的抗氧化活性,结果表明各个组分显示出不同的抗氧化活性,其中分子量小于5 kDa的组分最强。采用凝胶过滤色谱对分子量小于5 kDa的WPI酶解物进行分离,抗氧化活性强的组分继续采用RP-HPLC进行纯化。通过MALDI-TOF-MS与氨基酸组成分析鉴定该活性肽为His-Ile-Arg。
